Which version of Ubuntu 10.04 should I use with the Intel i7?

I am using the 32-bit version of Ubuntu 10.04 LTS-beta 2 on my i7 system, but only 3GB of th 6GB of DDR3 RAM appear in the system monitor. Is it safe to use the "AMD" 64-bit version with this Intel processor? If so, will it greatly increase the performance of the OS and its environment...enough to warrant reinstallation?

Yes, the AMD64 will run on intel 64bit too. Look at the apps you want to use and choose the desktop which suits you best. Most like GNOME but if you want to use more KDE apps and like to not mix apps then KUbuntu may be for you. If you like a slim and sleek desktop which reacts fast then XUbuntu is a good call. Your hardware is beefy enough so you will have no issues running any of the releases.

The 64bitness wil improve speed of data changes (encoding video / music etc). It will not speed up much else so if you only need a basic chat, web browse OS then the 32bit will be fine as it wioll use the 3Gb RAM you have. The 64bit install will allow you to easily upgrade your RAM as you will need the 32bit PAE kernel if you intend to get more RAM.

just install PAE image, it will work

$ sudo apt-get install linux-image-generic-pae
