You can set to autohide of GNOME Panel, right click the Panel and choose "Properties".

Autohide unfortunately doesn't hide the panel completely. It get still on nerves if you use a dock. The only thing I found yet is to delete the package "gnome-panel."

Oh, you don't need to delete gnome-panel.

Just run gcnof-editor, find /desktop/gnome/session/required_components_list, remove the "panel".
