is there any difference between the Ubuntu download installation disk for laptops and desktops or does it not matter?

Since Ubuntu 11.04 there is no difference. Prior to that there was a Netbook Remix which suited smaller laptops, but the desktop version is probably what you would still want for larger ones (14" and above)
