I'm running Linux and the SyncML option doesn't show up

Native SyncML support is only supported by the binary bundles (Mac OS X and Windows). Under Linux, you must install the pysyncml package for your distribution and architecture; available packages are available here:

Once this is installed, relaunch Task Coach and the SyncML setting should be available in the "Features" tab of the preferences dialog.
