The Quasar 3C 273 appears when I search for even its location, but not on the projection

This is normal. Stellarium's "Find Object" feature searches both its internal catalogs and the SIMBAD on-line astronomical database. Stellarium can get the current coordinates of the objects found in SIMBAD, but it can only display the objects defined in its catalogs.
