Please can you advise as to Stellarium's copyright requirements as per the following:
1. Creating graphs from data taken from Stellarium
2. Creating pictures from pictures taken from Stellarium
in the context of a PhD thesis. At present I am acknowledging Stellarium website as the programme used - is this sufficent? Do I need to state which version of Stellarium I have been using?

It's fine to use data, although of course you should be aware of the limits of accuracy and so on. Outline information is given in an appendix in the user guide.

For images, it's generally fine, although a few of the images which Stellarium itself used (e.g. Milky Way image) has specific limitations which are listed in the README file.
