That's not a change I'd want to make generally (what if the app developer changes the icon in the a version? lots of edge cases…). If you're a developer of a particular application looking to make this change just for your app, you could get this sort of behavior by modify SUInstaller to copy more selectively.

It's indeed a user-thing, where I'm looking to keep all my custom icons assigned ;)
