why should I trust you with my AIM traffic?

Who are you? Where are you? Really on the Cocos Islands? AIM can provide encrypted connections. Why does SamePlace say it can't? Why does my AIM traffic have to through your servers?

I'd like to have chat within Thunderbird, but need to be convinced that I can trust you.

Well, you shouldn't trust if you're not sure. :) This kind of paranoia is reasonable. Unfortunately, SamePlace is a jabber client, so the only way to connect to different IM networks is usage of Jabber transports. May be, one day, something will changed (bard said something about porting of libpurple [which was developed by Pidgin team], to avoid transports, but i think, better if he will tell about it himself)...
