- a list of all macros that can be used,
- list of all hot key combinations.
- and can these be added to?

I'm looking for a way to do a shortcut for a timestamp that does not include the date. Maybe I should be using an autokey program or something like that?

You can't add any shortcuts. I have never heard of an autokey program. You can change the date timestamp by editing the date template in the options dialog.
