Are there any more iconsets beside the 3 installed ones or is there some way to install a new iconset in Polly?

You can install any iconset via the Preferences window (the "plus sign" button next to the iconset combobox).

I don't know of any existing iconsets beside the ones we already ship, but you can make your own ones. It is simply a tarball (tar.gz or tar.bz2) with SVG files matching specific names. Go the /usr/share/polly/iconsets/default16 folder, for example, to know which are those names.
