Duplicate default launchers after Plank install

I've installed Plank on Debian 12 with a slightly customised theme. I'm creating a custom ISO with Cubic and notice that when first started the launchers on the dock are random but the Evolution (email) and Celluloid icons appear twice. How can one set the default launchers for the dock?
