As a list administrator, you can't, but as a site administrator with command line access, you can. Each list has a created_at timestamp, but it is not displayed anywhere. You need command line access to see it. See for example the withlist script at script at <http://www.msapiro.net/scripts/created.py> (mirrored at <http://fog.ccsf.cc.ca.us/~msapiro/scripts/created.py>).
