I can't find the option within my profile to unsubscribe from the network-manager.

This: "You received this bug notification because you are subscribed to network-manager in Ubuntu" is getting out of hand in my mailbox.

There's a link down the bottom of the email to the bug's +subscriptions page, which tells you how to unsubscribe. Alternatively, you can visit https://launchpad.net/ubuntu/+source/network-manager/+subscriptions directly.
