I'm a complete newbie, what am I doing wrong?

Source package recipes can't turn just any tree into a package; one of your branches needs to include normal Debian source package metadata (a 'debian' directory). I'd suggest reading through https://help.launchpad.net/Packaging/SourceBuilds/Recipes and http://packaging.ubuntu.com/html/.
