Which of the `--export-...` command-line options corresponds to the "LaTeX With PSTricks macros" file type that you can select from the "Save As" dialog in the GUI?

None of them. See https://inkscape.org/doc/inkscape-man.html for the currenly available export options. This may change with Inkscape 1.0.
