How do I create transparent text?

I am wanting to create a graphic with an image in the background as layer 1. Then perhaps have layer 2 be a black solid color. And a Layer 3 that has transparent text that reveals the image in the background from Layer 1. Does anyone have suggestions on how to do transparent text? https://d2gg9evh47fn9z.cloudfront.net/800px_COLOURBOX13328094.jpg as an example

I'd make a copy of the text and covert it to a single path, then use it as a clipping object.
