I am trying to return text that I made into an object back into text

I have been following a youtube tutorial about making a label and in the beginning the guy has you make the text an object. I want to change the text so I tried reversing the order of how he did it and I can't seem to make it and editable text again; it remains an object. Here's the video and it's at 2:30 where he turns it in to an object. Thank you!!!

You can't just go back somehow and make it not an object anymore?

You can "undo" (ctrl+z) if it was the last action you did, but apart from that, no. These are two fundamentally different things: one is a text that has a text content, and metadata such as the name of the font to be used, line spacing, etc; while the paths is just the geometry of the letters, but are a format that could be the shape of any possible drawing. It is sometimes possible to find back text from a drawing, but that's just OCR and inkscape is not an OCR tool.
