How do you change the width of a straight line?

I use the Bezier tool to draw a straight line and finally found out how to end it by double-clicking at the end point (not in manual as far as I can see).

But how to alter its width? I've tried the "Edit objects' colors, gradients, stroke width, etc" window, selected Stroke Style, set width at, say 1.000mm (all the other options are greyed out), but nothing happens. When I return to the diagram the line disappears. I then try again, but this time use the Select and Transform Objects tool to select the line before repeating setting the width in Stroke Style. Same result.

Go to the stroke tab of the Fill and Stroke dialog and set a stroke color, and then go to the Stroke Style tab and change the width.

Apologies for delay, Liam. I had to do some urgent work on the book I'm writing. I didn't realise that you had to set a stroke colour before Stroke Style to change width. Many thanks, John
