i want to change the color of the outline filter i used on an object

Hhmm...The only outline filter I can find is called Black Outline. But that doesn't seem to fit with the reported pink outline. If you can tell me exactly which filter you used, I can tell you how to change the color.

If you did use the Black Outline filter, that would imply that you used some other color-altering feature, such as another filter, extension, or a layer blend mode.

I would need to know those details as well.

I used (filters-morphology-color outline...) im pretty new to inkscape but from what i can tell it's the only thing active, no other filters or extensions, etc.

Oh ok. That filter uses the Color Matrix primitive to provide color, and unfortunately, I don't know how to manipulatee it, to change the color. But this might help.

When I just set up a test rectangle, to apply that filter, so I could tell you how to fix it, I noticed that it applied whatever color the rectangle was filled with, for the outline color.

So select the object, and change the fill color. The filter also seems to apply some kind of shading....somehow (I just don't understand that color matrix). So for example, if I set a white fill, the outline still looks light gray. If you want a black outline, or any relatively dark color no worries. A black fill will make a black outline. And even a dark blue still looks dark blue But for any lighter color, you'll have to tweak it using the Fill and Stroke dialog.

If you need an outline around a group of differently colored objects, and you want the outline to be all the same color, here's how. Before you apply the filter, duplicate the group, and to that group, apply whatever color you want the outline to be. Then apply the filter to that. And don't forget to group the original and the duplicate/outline object, if you need to move them around.
