how do I convert type to an outline object?

If I understand what you mean, you could do this:

1 - Select text
2 - Add a stroke
3 - Remove the fill

If the stroke happens to be set to zero or very wide (because of previous edits) it might look too small, or maybe can't even see it, or too large. If that happens go to Object menu > Fill and Stroke > Stroke Style tab > Width, and adjust the width.
