In Inkscape, go to the Help file on the Menu bar and select 'Inkscape Manual' from the drop down list. This is a really useful resource as it sets out a series of projects for you to work through showing you how to use it every step of the way.
Failing that there is the Inkscape blog tutorials http://inkscapetutorials.wordpress.com/tutorial-list-2/
or the tutorials on the Inkscape web site http://www.inkscape.org/en/learn/tutorials/
