how to make text go from small to larger then smaller again?

recreating a logo that has text that goes from one size, to gradually bigger with each letter, then gradually smaller....

Hi,

It depends on the details of what you're trying to achieve. If you want each letter to have a different size, go with editing your text, selecting one letter after another and changin it's size.
If on the other hand, the shape of the letters themselves are affected (i.e. the change is more subtle) then you'll have to use an enveloppe, and your text will have to be changes to an object. See http://tavmjong.free.fr/INKSCAPE/MANUAL/html/Paths-LivePathEffects-EnvelopeDeformation.html .
