Problem with three tools

I am new to Inkscape and so I am attempting to use old AI 9.0 commands ---
(1) "Fill and Stroke" I cannot get stroke to accept a different color than fill. Is there an Icon I can't find?
(2) "Gradients" Fonts remain as solid colors. I select the type (in a box) and the gradient tool, and then try to fade numbers across or up-and-down over the type. Nothing happens. What am I doing wrong?
(3) "View Guides" Cannot change from pixels to Inches.
I have checked (and download the Inkscape Manual, bit cannot find any instructions to solver these problems.
Please help.

Correction to my Question, "Problem with three tools"
There is a written error in #2,
Text says, "then try to fade numbers across or up-and-down." I meant to write "fonts, numbers and vector art."
I hope this makes my problem clearer.
