How to erase paths, can I erase parts of paths

Are you trying to delete a Segment ?
 A segment JOINS two path nodes. If so use the Edit Path by Nodes tool (F2) and click on the segment between two path nodes. You will know if you have selected the segment via a message in the 'notification display' (bottom center of the inkscape UI).

The message will display
2 of X nodes selected. Drag nodes...

Use the Tool Controls Bar (Bar above the canvas) and there is an icon to 'Delete segment between two non-endpoints'. This is the 6th icon from the left in the Tools Controls Bar, float your mouse over the icon and a pop-up message will display the icons function.

If you are not trying to delete a segment can you explain in greater detail what you are trying to do? Are you using the Eraser Tool (Shift+e) in the Toolbox Bar?
