Do not see entire software

When I started going through the tutorials it seems as though I am missing some of the software. For example under stitcher in the tutorial there are options for output , processing and file formats. When I go into this same screen on my computer the only options I have are Projection, field of view, canvas size, crop and panorama outputs. How do I gain access to the other options?

Some options are only displayed when they are applicable. E.g. the HDR format can only be changed when at least one HDR output is selected. Otherwise it is disabled. The same applies also to other settings.
This dialog is long. Maybe you need to scroll down to see all.
