Black Ink Cartridge Never Used

HP office Jet Pro 8600 - Printing default is set for black only gray scale. Printer only uses the color cartridges to print, black cartridge is seldom, if ever, used. What is the correct way to set up the printer so that the black cartridge is used for black-only gray scale printing?
