Changing Default Printer settings on Server

Asked by PiP

I want to keep "draft" as the default print quality instead of "normal". I have Ubuntu Hardy server so no KDE or GUI so it doesn't look like I can use hptoolbox. From my windows machines I can go to printing preferences and change quality to draft but it only works for 1 print job, then it reverts back to normal quality. Is there some easy way to change this?
I tired going into the printers (photosmart 5180) ppd but it was pretty complicated and long file and I didn't see any default options being set. THANKS!.

Also if you run hp-toolbox, click print settings, you can change the print modes.
