Not to worry, Sab. The scanjet_pro_2500_f1 is not the only missing entry. Upstream HPLIP will have to deal with this bug. I can, however, give you something to try. It is a pure guess!

Edit models.dat to have

[scanjet_pro_2500_f1]
scan-src=3
scan-type=9
support-type=2

Then try 'scanimage -L' and scanning.
