I would like to know whether it is possible to add or modify the recipe categories easily.

Yes -- when you enter a recipe, simply type in a new category. In the
future, that category will appear on the dropdown lists. The widgets for
categories, cuisines and sources all allow both selecting from a dropdown
and typing in a new entry. New items get added to the dropdown
automatically.
