How to hide or filter out some file open activities?

This tool seems always to list all the activities without providing options to configure only some set of specifies file activities to be recorded, doesn't it?

Zeitgeist has blacklists support, but there is currently no graphical user interface providing this functionality. A mode to temporarily disable logging (similar to the "private browsing" option in Firefox) is also planned.

Not really, but the latest version of GNOME Activity Journal
(available in the Zeitgeist PPA) features a Blacklist Editor. Just
click on the Settings icon (top right), enable the "Blacklist Manager"
plugin and you'll get a new tab for "Blacklist". Please note that the
editor is still in a very basic state (it only allows filtering by
URL, and only supports *-wildcards on the end of the URI).

If this isn't enough for your needs you can edit the Blacklist
directly over D-Bus using dbus-send (or a GUI like d-feet). You'll
find the necessary API information for this on
