Are you saying that you have no "File" menu in the menu bar or that there is a "File" menu in the menu bar, but in the "File" menu there is no "Open Project" item?

here is some more information:

-macbook:~ s...$ java -version
java version "1.6.0_17"
Java(TM) SE Runtime Environment (build 1.6.0_17-b04-248-9M3125)
Java HotSpot(TM) 64-Bit Server VM (build 14.3-b01-101, mixed mode)

i also tried running gephi 0.6 beta3 and could not start it for a while. the error message said the java jar file gephi.jar could not be launched. now it seems to be working. but it asks for gephi files...so when i fed to it a gexf file, it simply collapses with the following error message. in any case, i really look forward to getting gephi to run and to try it out. :)
Error

Message:
    java.lang.NullPointerException

    gephi.controller.desktop.DesktopProjectController$2.run(DesktopProjectController.java:213)
