Three questions: Is this the fix so that Do will launch my default email browser, Thunderbird, instead of Evolution when I try to write an email? Second, if this isn't the fix, should I completely uninstall DO and reinstall it so it will recognize the correct email client? And third, if this is the fix, I'm not quite sure how to make it work. I can't find a remap file in the .local/share directory.

Do will use whatever xdg-email uses, something in your system is misconfigured if Do is not using what you consider to be your default client. Fixing xdg-email will fix Do.
