Do

imortal launchers?

I created menu items for launching ssh-sessions in terminals, Do found and indexed them and all was good.

However, changing icons, or deleting them is not mirrored in Do. And I have not found any indication of a cache-file that I can reset/delete.

We have a fix for this in the next release (I think -- the cache-file situation you mention is tricky. My experience with application entries is not one of well-defined, uniform behavior).

Look around in ~/.local/share/applications. That's where menu customizations live, and sometimes the GUI menu editors leave a mess in there.

Aha, there they were, in files conveniently named "alacarte-made*.desktop". And .. Yes, they disappeared from Do after restarting it. Thanks!
