Alex should have left a bigger comment (other than none) but, this is caused because GNOME is starting GNOME Do before it finishes launching its WM. So GNOME Do starts, it says "hey, there is no composite support" because the WM is not running, and reverts you back to a theme that works without composite. Largely, this is your distro's fault and there is little we can do about it.
