Fine-tuning of backup parameters/options

Deja-Dup looks really easy to use.

However, if I wanted to have lower-level control over some of the options, how would I do that?

e.g. volsize being 5MB results in a very, very large number of files; it would be nice to make this larger.

Is it best simply to use duplicity directly for this level of control, or is there a means of changing the defaults used by Deja-Dup?

In general, low-level option tweaking is not supported. If you need extra control, your best bet right now is using duplicity directly. There is a vague intent to provide some level of gconf-tweaking to specify extra options or specify a wrapper script, but that hasn't happened yet.

Regarding your specific issue of volsize, that has been improved since Deja Dup 11.0. Now, it uses volsize of 30 if backing up to a local folder, otherwise 10.
