Manual read-restore of the incremental backup: any guide?

It's there any guide o documentation that explain how to restore, or simple have the ability to read, some files of an entire backup (IE, incremental and cripted) ?

There's no real documentation, no. That's a good idea in and of itself (maybe a guide in the wiki or in the online help for guiding the user through a restore).

However, to answer your question, to restore a single file, you can right click on it in Nautilus and say "Revert to previous version". You can select more than one file and do this as well.

Or, you can run deja-dup on the command line like so:
deja-dup --restore FILE1 FILE2 FILE3...
