How and what to backup before changing from Ubuntu 12.04 to 14.

I want to upgrade my Ubuntu version: from 12.04.5 to 14....
It was recommended to make a complete system backup before.
I would choose a hard drive.
What and how should and can I do this?
If something happens, could I restart my old version from the hard drive?
