I'd like to be able to select the days of the week I want to backup.

Deja-dup does a daily backup of my laptop every morning at office using ssh to connect to the backup server.
However, during the weekend, I am not at office and thus no connection to that backup server is possible but deja-dup is trying to connect anyway.

I thus would like to select the days of the week (Mon-Fri) when deja-dup should perform the backup.

Is this feature already planned or developped?

I have version 20.1-0ubuntu0.2 of deja-dup.

A) Bug 479191 is the feature request to add more detailed scheduling options. It's currently not on the roadmap, but that's where you can subscribe for updates on that feature.

B) Version 22.0 will somewhat help your situation. If your work server has a DNS name that is only resolvable at work, then Deja Dup will not try to back up when that name isn't resolvable.
