To reschedule a weekly backup to, say, Sunday, just start a backup manually on Sunday. Done.

Future automatic weekly backups will now happen on Sunday around the same time, assuming your computer is on and you're logged in of course. If you've gone on a vacation and only switch your computer on when you're back on Monday morning, Déjà Dup will notice the backup is overdue and will do it. That reschedules weekly backups to Monday mornings, so again, start a manual backup the next Sunday.
