Of course you can use Cubic to create your own Distro.

Regarding Ubiquity and Calamares, here are my thoughts...

(Please note, I haven't used Calamares, so I will assume it is simply an application like Ubiquity).

Ubiquity is installed as a package in Ubuntu.

This package is automatically removed after the installation completes (you will see it flagged for removal on Cubic's Packages page).

You will need to uninstall Ubiquity from Cubic's terminal page. (It will no longer be listed on Cubic's Packages page).
Then install Calamares, and make sure you flag it for removal (the same way Ubiquity was).

As you know, he user can launch Ubiquity from the Live session (after selecting "Try Ubuntu").
For Calamares, you will need to change the list of "favorite" apps in the Ubuntu dock: remove Ubiquity, and add Calamares instead.
To do that, see https://answers.launchpad.net/cubic/+question/665819.
(Make sure you also change the application link on the Desktop).

On Cubic's Boot Options page, look at grub.cfg and loopback.cfg.
They specify "maybe-ubiquity" or "only-ubiquity".
This probably needs to be updated for Calamares.
I ~think~ this is what makes the Ubiquity installer appear as the 1st thing you see (with the "Try" and "Install" buttons) once you boot a Live ISO. So you should update this for Calamares.

Two official flavors of Ubuntu use the `calamares` installer.

- Lubuntu has since 18.10 (the first LXQt release); ie. cosmic/disco/eoan/focal/groovy/hirsute
- Ubuntu Studio has since 20.10 (their first release using KDE); ie. groovy/hirsute

Lubuntu no longer has the "Start Lubuntu/Install Lubuntu" question come up (maybe-ubiquity/only-ubiquity type question mentioned in @Cubic's comment); I forget when that change was made (it was made during the releases using calamares though but wasn't recent meaning a couple of releases back) and it now just boots to live system, the user installs from the live desktop. I have less experience with Ubuntu Studio.
