How often does this package update to the latest build?

The current package is 2.3.1-1
I suggest open terminal [ctl+alt+t]
sudo apt-get update
sudo apt-get upgrade

There are only 2 old bug reports for the package
Debian is still on luakit 2.2.1-1
Updates to the latest build for security updates or the next new Ubuntu OS.

In addition you have to be aware that Ubuntu is copying packages from Debian (to avoid double packaging work), and also Debian does not have version 2.3.3 yet, see https://luakit.github.io/news/index.html

If you experience crashes with the current version, then you should create bug reports, in this case one in the Ubuntu bug tracker and one in Debian.
