Default themes not working in 22.04 (Jammy)

First time posting on here, and new to TOPS, so I will do my best to make this as simple as possible (have mercy interwebs, lol).

Been working on Ubuntu 22.04 LTS for roughly a month or so now.
The first week I used Ubuntu I had zero issues changing the appearance theme(s) through the default drop down tab (been using the Vintage appearance since I liked that and wanted to focus on just learning than tinkering with the themes (for now)).

Fast forward to today, and for the last three or so weeks I haven't been able to get any color on my terminal for any Input/Output.

I have tried uninstalling and re-installing Ubuntu.
Updating it when new packs come.
Tried swapping themes for a brighter theme (default ones only).
Tried the advanced settings to change the appearance in Ubuntu and also making sure the default tab for appearance (before you scroll down to the actual Ubuntu terminal tab in settings) has the same information so there is no mismatch.

Everything is in the exact same grey tone for all input and output.
It's getting a bit harder to discern what I am working on as I get further into the curriculum.

I have searched everywhere and I have not been able to find anything in regards to why the defaults do not properly anymore.
Any guidance would be genuinely appreciated.
